Kaiseki originally followed elaborate tea ceremonies held for aristocratic society in feudal Japan, with a formal structure of prescribed courses. Expert chefs who train for ten years or more may modify courses with complementary seasonal or local dishes, striving for 'Omotenashi' — wholehearted hospitality and excellence in every detail.
